Did you know that even though your package of organic almonds claims they are "Raw" that they may indeed NOT be "Raw"? In 2007 the USDA, FDA and the California Almond Board announced that all almonds including organic must be pasteurized. In 2009, after this ruling was challenged, a federal judge upheld the pasteurization law. Now, 4 years later, confusion still reigns, but the consensus is that 99% of almonds labelled as "Raw" are NOT "Raw" and are not the health-promoting gift that Nature intended.
